Buttered chicken

Again, not that I need to tell you, but life can be crazy so if I can not only get my dinner ready for my family in the morning but also be able to meal prep at the same time!  It’s almost to good to be true!  This is a recipe that will take about 10 min to prep and put in the crockpot! I like to cook about double what my family is going to eat because I like to meal prep the rest! AKA portion it out and freeze it! Lol Feel free to add more chicken or even double the recipe! A great way to meal prep is to get a group together and have each person bring a finished crock pot then everyone can portion out and try different recipes! For those of you who are flight crew like me you know that space may be limited in your bag. Using freezer bags is a great way to save space but I do recommend double bagging. Also I Recommend getting the Strong Bag brand lunch box!

Feel free to garnish with
Cilantro and lime
 
3 lbs skinless boneless chicken
(cut into 1-2 inch cubes)
1 onion diced
4 cloves of garlic
1 tsp cumin
2tsp graham masala
2tsp curry
1 14oz can light coconut milk
1 12oz can tomato paste
1 cup low fat greek yogurt
1 large head of broccoli (cut up)

Mix everything in the crock pot and cook on low for 6-8  hours. You may cook on high for 4-6 but not recommended. Place this on top of a bed of rice or on a bed of riced cauliflower for a lower calorie option. Enjoy
