Are you a morning person? I am not, I am the person that gets up and takes an hour just to get going for the day. However when I do finally get going and get motivated and pumped for the day, I have a hard time slowing down and remembering to cook dinner. Anyone Else have that problem? I spend most of my day doing Free Wellness Evaluations or fallow ups with my current amazing clients. Taking time to do fun activities with my son and before I know it the day is over.
Crock pot meals are amazing for the busy person at home in the morning then slammed at night. Maybe you are taking your kids to soccer or some great event they love. There is just never enough time in the day! Set yourself up in the morning to come home to an amazing meal hot and ready for you the moment you walk in the door.
Crockpot Lemon Chicken
The amount of chicken you use is up to you, just modify seasonings. This recipe is for 2 large chicken breasts.
Cook on low for 6-8 hours.
Serve over rice (optional)I personally like it with a side of stemmed or sautéed vegies and a side salad with olive oil and vinegar. If you are looking for a low carb option stay away from the bed of rice. A great rice alternative is riced cauliflower. Small Salad and Canned beats is what is shown in the picture.
