Step one you want to cook your quinoa
Quinoa is a hearty grain and expands when cooked. This Recipe calls for 3 cups of cooked quinoa so you only need to cook one cup of quinoa with 2 cups of water to make the 3 cups cooked. Before cooking your quinoa give it a good rinse. Quinoa has a natural bitter coating that is called saponin. After you have rinsed your Quinoa you cook it much like rice, bring your water to a boil add the Quinoa allow to biol for 5 min then let simmer on low for another 5- 10 min.
In a bowl Mix your sugar, eggs and tapioca. Mix well
then add in your Chia seeds Quinoa and vanilla
Mix well then return to the pot over a Med heat
Stir frequently cook for 10-15 min
Stir consistently for the last 3-4 min while adding butter and any other flavors such as cinnamon.
Top with desired fruit, i choose raspberries when in season.
This Dish is best served hot but can also be saved for later, served cold or reheated!
