Some of the Best meals are the ones that you can cook for dinner then freeze the leftovers for later. This is a great way to make meal prepping less time consuming and have some variety.
Depending on how you like your peppers there are a few options for you. If you prefer them soft vs having a little crunch you will want to cut them then boil them for about 10 min to soften them up. I prefer to use the green bell peppers but feel free to mix it up with Red, Yellow, or Orange bell peppers.
You could even use the mini sweet peppers to make little appetizers. You can add in extra mixings or leave some out if you want. Make it fit your style and the flavors you prefer
I like to keep things simple so I put it all together in the rice cooker or pot and cook the filling all together. ( If you are using the ground turkey or beef that will need to be cooked separate and mixed in before the pepper is filled)
You can either cut the pepper in half down the middle from top to bottom and cook them open faced or you can cut the top off so it has a little lid. However you cut it make sure you remove the seeds and the white lining.
If you have any littles at home like i do then you can make a few mini stuffed peppers out of the mini bell peppers. It makes them feel big because they get their own and you feel good knowing you did not waist a whole pepper!
1 cup rice
.5 cup lentils
1 can dices tomatoes
(Cook in rice cooker or stovetop)
(You can do just rice or use quinoa, make it your own mix and match)
In large pan brown
2lbs ground turkey or beef
1cup diced mushrooms (optional)
.5 tsp garlic salt or 1tsp minced garlic
Preheat your oven to 350*F
Mix the rice mix in with the meat when everything is cooked.
3 large bell peppers any color
Or fill a bunch of mini peppers.
Slice The pepper horizontal straight down the middle. Clean out the seeds and the white inner lining
On a baking sheet place your peppers cut side up then fill and over fill with your yummy stuffing.
Top with any cheese you would like (optional)
Bake at 350 for 35 min
